What the grade means

A Pfund grader is a wedge of standard amber glass. You slide the sample against it until the two match, and read off the depth in millimetres. Eight millimetres is water white, 114 is amber, and anything past that is dark amber.

It is a colour measurement and nothing else — it does not say the honey is stronger, older or better. Dark honey tastes of what was flowering, and so does pale honey.

Water white at one end, dark amber at the other, and the reading is a depth in millimetres because the instrument is a wedge of amber glass you match the sample against. Twelve of these depths are in use on this site.
